  1. Dear Jess,
I have read ever word of your blog and I am soooo envious of you. Wow! I sure do think you made an excellent choice. IF I could do it again I would love to have joined you :) I am so happy for you. I will keep up on your blog. Write if you get the time.

  2. Hi!
I am new to your blog (i love it by the way) so sorry if the answer to my question is here somewhere. But how did you go about getting a visa to travel for a year. I have been looking into living in Europe for a year and thus far I have only found 3 month visas.

Oh and THANK YOU for the pear ravioli post... I fell in LOVE with those when I studied in Florence. Now all I need is the bollitos recipe and I can die happy :)

    1. Hi Casey! Glad you found me! Sorry I haven't updated in a while, I've started a new personal blog at ! So happy you like the pear rav recipe, seriously is UNREAL. Maybe my favorite dish in the whole world! :) For the visa thing, I didn't have a visa for a year, only three months. I can't go into too much detail, but to stay there for a long time, I suggest signing up for a class to learn Italian and get a student visa!

  6. Jess...we used the pear water that drained from the shredded ripe pears to add to butter sauce at end of prep. We placed the cooked ravioli back in the butter-pear reduction just before serving. This truly rivaled the pear flavor of the original pear Iocchetti. Thank you for Recipe. Great.
